Sabzi Raita - Charred Veggies in Zingy Yoghurt

An elevated Raita with main character energy that stars charred onion, tomatoes and peppers. Wow friends, family (and yourself!) with this interesting addictive dish!

Raitas around here have main character energy. Whether it's this green chutney style one or Palak Raita they are ALWAYS good enough to eat on their own.

Never heard of Sabzi Raita?

To be honest neither had I till my mother got this recipe from a veritable aunty network that never seems to stop surprising (or impressing!). Since then it has become our party trick, elevating countless dinners and making the transition from our dinners to those of family and friends.

What makes this special?

Here it is not just about the ingredients, but about how you treat them. On their own these veggies are okay, but char them at high heat and suddenly they are positively sexy.

Note of caution: put your exhaust on high, and keep your windows open. Just trust me.

Vegetable Raita - Yogurt w Veggies

A smoky, delicious take on raita that has major main character energy!

Equipment

  • 1 frying pan for sauteeing
  • 1 Mixing Bowl

Ingredients

  • 1 green pepper
  • 1 roma tomato (flesh removed)
  • 1 medium onion
  • 4-5 green chillies slit in half
  • 1 750 g container yogurt
  • ½ tsp garlic paste a little more if you will serve it soon after making it
  • salt
  • ½ tsp red chilli powder

Instructions

  • Slice all the veggies into similar sized strips.
  • Heat oil in a wok or large saucepan/frying pan on high heat
  • Stir fry the veggies on high heat one by one until they are partially cooked and have charred edges. The best order is: onions, peppers, chillies, tomatoes. Take care with the green chillies, they only need 30 seconds.
  • As the veggies get done, keep adding them to a large bowl.
  • Season with salt when they are all done and set aside to cool to room temperature.
  • Add the garlic paste, salt, and red chilli powder to the yogurt, mix well until smooth.
  • Pour over the cooled veggies and stir.
  • Adjust seasoning before serving.

    I made this raita some time ago, and can’t get it out of my head! It’s such a delicious side, in fact, I can have it all just as is. And it pairs beautifully with daal-chawal (lentils-rice)! Thank you so much for all your recipes, they are always so good and I love the stories behind them.

    Hi Sarah!
    I am planning to do your raita (which looks incredibly delicious) with your hydrabadi chicken pulao tonight, quick question for the raita did you just add the garlic paste to the yoghurt mix? Like raw? Or do i stir fry the garlic paste with species then mix it with the yogurt?

    I've never seen a raita like this before! I almost feel like it has fajita flavors because of the charred onions and peppers loll
