Khageena - Pakistani Scrambled Eggs w/ Onions and Chillies

Khageena reminds me of Karachi mornings. Of the still silent heat punctuated by the whirring of the fan, my kids watching cartoons on tv while my mother deftly cracks eggs on the marble counter top in the kitchen downstairs. Within minutes plates piled with scrambled eggs resplendent with just cooked onions and chillies make their way upstairs. Slim white bread is toasted in the oven quickly and within minutes the once piled high plate of eggs is polished off before everyone goes off to take on the day. Khageena for me is the quintessential Pakistani egg dish.

The traditional omelette or even the masalay walay anday are secondary (but also delicious). Here in Toronto I have gotten into the habit of dicing a smattering of extra onion, quickly snipping off some chillies into the mix and whipping them up for breakfast when my usual boiled eggs don't hit the spot. It is an easy enough way to have your eggs on a weekday and yummy enough to repeat on a weekend. 

I should take this time to admit that I have a bit of an egg addiction. My father was laughingly telling me just earlier today that for the longest time he was told that not to eat egg yolks because of cholesterol and now he is advised to eat a few a day. I am definitely one of those that will eat eggs several times a week, and not just the whites! It warms my little heart that my two girls are finally also camp eggs.

A Little True North Pride

While World Egg Day is a global celebration I wanted to take the time to share something super cool with my fellow Canadians: Your eggs are local. They are produced all over Canada by over 1000 farm families and make it from the farm to the store within a week. Isn't that something?! Because our eggs are coming to us from farms adhering to the National Animal care and food safety programs the hens laying the eggs are well taken care of. It brings me considerable comfort to know all those things and I hope it does you too!

Khageena

Servings: 2

Ingredients

  • 4 eggs
  • ¼ cup minced onion
  • 3-4 minced green chillies
  • salt
  • red chilli powder
  • oil for cooking
  • chopped cilantro for garnish (optional)

Instructions

  • Heat a lug of oil in a saucepan
  • Briskly whisk the eggs, a little chilli powder and a fat pinch of salt together
  • When the oil shimmers (gets hot) add your onions and green chillies and saute until the onion looks translucent
  • Add your eggs and cook, breaking and folding in on over itself till required doneness
  • Eat hot with toast
